A special recipe: Baghali Polo!
Baghali Polo is a traditional and healthy food made of rice, broad beans and dry dill: A delicious food that decorates our important party and represents our food culture and taste. We usually put it on the menu at parties and important gatherings and make our guests happy with its elegant appearance and unique taste. Because meat or chicken is served next to this dish and it is not mixed with it, it can be a good option for when you want to have vegetarian dishes in the party.
You always ask us in the comments section about how to prepare food with dry broad beans. So we got to work and soaked the broad beans to start cooking:
Pour boiling water on the broad beans and let them soak for an hour or two. After a while, it becomes completely like a freshly picked bean, as if it had never dried.
Now put the soaked broad beans in the pot with rice and drain them when cooked.
Put lettuce leaves on the bottom of the pot. Then put the layer of rice, fava beans and dill in order.
Finally, pour some brewed saffron and oil on the rice and let it brew.
Then sit cosy and watch how the guests ask you from which store you bought the fresh fava beans; because our dried fava beans are of high quality and cannot be distinguished from fresh beans.
