Tips for grinding saffron
Maybe you have heard that grinding and using saffron has a special method. There are different opinions about which method is better and how to have better brewed saffron with the most color. But some tips are common in all methods and by following them we can prepare the best that is possible:
After buying excellent saffron, the most important thing is to grind it! You may have the best saffron in the world available, but by grinding it wrong, it will give less color, it will be dark, or the color will not be as beautiful as we expected.
The most important point in grinding saffron is mortar! Mortar should not be metal. Metals are strong conductors of heat. By raising the temperature of saffron, the metal mortar destroys its color and somehow burns the saffron! So, the electric mill should go aside too, and be replaced with the old ways.
The saffron mortar must be either wooden or stone. Even so, you should not grind the saffron too much. Grind slowly and let it rest for a short time in between.
Now it’s time to get color from saffron!
There are two methods for this step that work best. The first method is brewing saffron. Put a small spoon of ground saffron in a small container, pour a third of a glass of boiling water and close the container. Let it brew for 10 to 20 minutes and enjoy the color!
In the second method, pour the ground saffron on some ice and leave it in a corner so that as the ice melts, the saffron will gradually produce color. Although this method takes more time, it works better and the color is breathtaking!
